Pasta Carbonara (Print Version)

# Ingredients:

01 - 10 slices bacon, cut into small pieces.
02 - 16 ounces spaghetti or linguine.
03 - 3 large eggs.
04 - 1 large egg yolk.
05 - 1 1/4 cups parmesan cheese, finely grated.
06 - 1 teaspoon black pepper, freshly ground.
07 - 1/2 teaspoon salt for pasta water.
08 - Fresh parsley for garnish.

# Instructions:

01 - Crisp bacon in large skillet over medium heat, 8-10 minutes. Reserve 1 tablespoon fat.
02 - Whisk eggs, yolk, reserved bacon fat, parmesan, and pepper. Add 1/2 cup pasta water.
03 - Boil pasta in salted water until al dente. Reserve 1 cup water before draining.
04 - Off heat, quickly toss hot pasta with egg mixture until creamy. Add bacon and toss.
05 - Add pasta water if needed for consistency. Top with parmesan, parsley, and pepper.

# Notes:

01 - Toss quickly off heat to prevent scrambling.
02 - Reserve pasta water for sauce.
03 - Serve immediately.
