Crisp bacon in large skillet over medium heat, 8-10 minutes. Reserve 1 tablespoon fat.

Whisk eggs, yolk, reserved bacon fat, parmesan, and pepper. Add 1/2 cup pasta water.

Boil pasta in salted water until al dente. Reserve 1 cup water before draining.

Off heat, quickly toss hot pasta with egg mixture until creamy. Add bacon and toss.

Add pasta water if needed for consistency. Top with parmesan, parsley, and pepper.
