Classic Linzer Cookies (Print Version)

# Ingredients:

01 - 226g unsalted butter, softened.
02 - 100g granulated sugar.
03 - 3 tablespoons packed brown sugar.
04 - 1/4 teaspoon ground cinnamon.
05 - 1 1/2 teaspoons vanilla extract.
06 - 250g all-purpose flour.
07 - 67g almond flour.
08 - 1 tablespoon cornstarch.
09 - 1/2 teaspoon salt.
10 - 160g raspberry jam.
11 - Powdered sugar for dusting.

# Instructions:

01 - Beat butter, sugars and cinnamon until fluffy, then add vanilla.
02 - Mix dry ingredients into butter mixture until combined.
03 - Form into discs, wrap, refrigerate 30 minutes.
04 - Heat oven to 350°F and line baking sheets.
05 - Roll dough thin and cut circles with centers from half.
06 - Cook 9-10 minutes until edges are light golden.
07 - Dust tops with sugar, spread bottoms with jam, sandwich together.

01 - Can substitute almond flour.
02 - Dough keeps 5 days chilled.
03 - Try different fillings.
