Heat oven to 350°F and line pan with parchment.

Mix flour, sugar, salt, butter and vanilla, press into pan.

Cook 18-20 minutes until edges brown, prick with fork.

Mix sugar with zest, then blend in flour, eggs and lemon juice.

Pour filling over hot crust, bake 20-25 minutes until set.

Cool 1 hour at room temp then 2 hours in fridge.
