Citrus Grilled Chicken & Rice (Print Version)

# Ingredients:

01 - 1 1/2 pounds boneless skinless chicken thighs or breasts.
02 - 1/4 cup orange juice.
03 - 2 tablespoons lime juice.
04 - 2 tablespoons olive oil.
05 - 3 cloves minced garlic.
06 - 1 teaspoon ground cumin.
07 - 1 teaspoon smoked paprika.
08 - 1/2 teaspoon chili powder.
09 - 1/2 teaspoon oregano.
10 - 1 teaspoon salt.
11 - 1/2 teaspoon black pepper.
12 - 1 cup long-grain white rice.
13 - 2 cups chicken broth.
14 - 1/2 cup heavy cream.
15 - 1/4 cup sour cream.
16 - 1/2 teaspoon garlic powder.
17 - 1/2 teaspoon onion powder.

# Instructions:

01 - Mix citrus juices, oil, garlic and spices. Add chicken and marinate 1-8 hours in refrigerator.
02 - Grill marinated chicken 5-6 minutes per side until internal temperature reaches 165°F. Rest 5 minutes before slicing.
03 - Simmer rice in chicken broth for 15 minutes covered until tender and liquid is absorbed.
04 - Stir heavy cream, sour cream and seasonings into cooked rice. Cook 2-3 minutes until creamy.
05 - Serve sliced chicken over creamy rice. Garnish with cilantro if desired.

# Notes:

01 - Add jalapeños or cayenne for extra heat.
02 - Can use brown rice with adjusted cooking time.
03 - Reheat with extra liquid to maintain creaminess.
