Christmas Linzer Cookies (Print Version)

# Ingredients:

01 - 2 1/2 cups all-purpose flour.
02 - 1 1/2 cups confectioners sugar.
03 - 1/2 cup butter (1 stick).
04 - 2 eggs.
05 - 1 teaspoon vanilla extract.
06 - 1/4 teaspoon salt.
07 - 2 cups slivered almonds, finely ground.
08 - 1 cup raspberry jam.
09 - Extra confectioners sugar for dusting.

# Instructions:

01 - Beat butter and sugar in a mixing bowl until creamy.
02 - Add eggs, vanilla, and salt, mix until combined.
03 - Grind almonds finely in a blender, add to butter mixture.
04 - Mix in flour until well combined.
05 - Split dough into 2 discs, wrap in plastic.
06 - Chill for 4 hours or overnight.
07 - Roll out dough and cut pairs of cookies.
08 - Cut center holes in half of the cookies.
09 - Place on baking sheets.
10 - Bake at 350°F for 8-10 minutes.
11 - Cool completely on wire rack.
12 - Spread jam on solid cookies.
13 - Dust top cookies with confectioners sugar.
14 - Join cookies together to make sandwiches.

03 - Dip cutters in flour to prevent sticking.
