Christmas Breakfast Casserole (Print Version)

# Ingredients:

01 - 12 large eggs.
02 - 1 cup milk or half & half cream.
03 - 2 pounds frozen hash brown potatoes.
04 - 1 pound bulk breakfast sausage, cooked.
05 - ½ cup onions, diced.
06 - ½ cup mixed red & green bell peppers, diced.
07 - 1½ cups cheddar cheese, freshly shredded.
08 - 1½ cups pepper jack cheese, freshly shredded.
09 - 1 teaspoon kosher salt.
10 - ½ teaspoon black pepper.

# Instructions:

01 - Spray slow cooker with cooking spray.
02 - Mix cheddar and pepper jack cheeses in one bowl.
03 - Combine cooked sausage with diced peppers and onions in another bowl.
04 - In a large bowl, beat eggs well. Whisk in milk, salt, and pepper.
05 - Layer ingredients in slow cooker: Place ⅓ of hash browns, add ⅓ of sausage mixture, and top with 1 cup of cheese mixture. Repeat layers twice more, ending with cheese.
06 - Pour egg mixture evenly over all layers.
07 - Cover and cook on low for 8 hours.

01 - Use freshly shredded cheese for best melting.
02 - Don't open the lid during cooking.
03 - Can layer ingredients the night before, add eggs before cooking.
04 - Perfect for holiday mornings.
