Chocolate Pudding Pie (Print Version)

# Ingredients:

01 - 25 regular Oreo cookies.
02 - 5 tablespoons (71g) butter, melted.
03 - 3 cups (710ml) whole milk.
04 - 1 cup (170g) semi-sweet chocolate chips.
05 - 5 egg yolks.
06 - 1 cup (200g) granulated sugar.
07 - 4 tablespoons (40g) cornstarch.
08 - 1/4 teaspoon salt.
09 - 2 teaspoons vanilla.
10 - 1 1/2 cups (355ml) heavy whipping cream.
11 - 2 tablespoons granulated sugar for whipped cream.
12 - 1/2 teaspoon vanilla for whipped cream.
13 - 1 large chocolate bar for garnish.

# Instructions:

01 - Crush Oreos in food processor until fine. Mix with melted butter in 9-inch deep-dish pie plate and press into bottom and sides. Refrigerate.
02 - Heat milk and chocolate chips in saucepan over high heat, stirring until chocolate melts (1-2 minutes).
03 - Whisk egg yolks and sugar until pale yellow. Add cornstarch, salt, and vanilla.
04 - Slowly pour warm chocolate mixture into egg mixture while whisking. Return to saucepan.
05 - Heat over medium-high until boiling, whisking constantly until thick. Remove from heat and whisk 1-2 minutes until smooth.
06 - Pour pudding into crust, cover with plastic wrap pressed onto surface. Cool to room temp, then refrigerate 4+ hours.
07 - Beat heavy cream until thick, add sugar and vanilla. Beat to medium-stiff peaks. Spread over pie.
08 - Use vegetable peeler to create chocolate shavings over top of pie.

# Notes:

01 - Can be made up to 24 hours ahead.
02 - Overnight chilling works best.
03 - Extra pudding can be saved if pie plate isn't deep enough.
