Chickpea Salad with Avocado (Print Version)

# Ingredients:

→ Dressing

01 - 3 tablespoons extra virgin olive oil
02 - 3 tablespoons lemon juice (from 1 large lemon)
03 - 1 garlic clove, pressed or minced
04 - 1/2 teaspoon sea salt, or to taste
05 - 1/8 teaspoon black pepper

→ Salad

06 - 1 1/2 cups cherry tomatoes, halved
07 - 1 English cucumber, halved and sliced
08 - 15 ounces chickpeas or garbanzo beans, drained and rinsed
09 - 1/2 medium red onion, thinly sliced
10 - 1 avocado, sliced
11 - 1/4 cup cilantro, chopped
12 - 4 ounces feta cheese, diced

# Instructions:

01 - Combine the olive oil, lemon juice, garlic, salt, and pepper in a small mixing bowl. Whisk to blend, or add to a small mason jar and shake to combine.
02 - In a large salad bowl, combine the cherry tomatoes, cucumber, chickpeas, red onion, avocado, cilantro, and feta cheese.
03 - Pour the dressing over the salad to taste (using all of it is recommended). Gently toss to coat all ingredients evenly.
