Easy Chicken Tamale Casserole (Print Version)

# Ingredients:

01 - 16 ounces cornbread mix.
02 - 3/4 cup milk.
03 - 1 large egg.
04 - 7 ounces diced green chiles, drained.
05 - 14.5 ounces creamed corn, undrained.
06 - 3 cups rotisserie chicken, chopped.
07 - 10 ounces green enchilada sauce.
08 - 2 tablespoons taco seasoning.
09 - 1 cup shredded cheddar cheese.
10 - 1/2 cup shredded monterey jack cheese.

# Instructions:

01 - Heat oven to 400°F. Spray 9x13 baking dish with cooking spray.
02 - Mix cornbread mix, milk, egg, chiles, 1/2 tablespoon taco seasoning, and corn. Spread in dish.
03 - Bake 20-25 minutes until just set and light golden.
04 - Toss chicken with remaining taco seasoning.
05 - Pierce warm cornbread, pour sauce over. Add chicken and cheeses.
06 - Bake 15 minutes until cheese melts and browns. Rest 5 minutes.

01 - Base should be soft like tamale masa.
02 - Can use other proteins.
