Chicken Barley Soup (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil.
02 - 1 medium yellow onion, chopped (about 3/4 cup).
03 - 2 cloves garlic, finely chopped (about 1 tablespoon).
04 - 2 medium carrots, chopped (about 3/4 cup).
05 - 3 ribs celery, chopped (about 3/4 cup).
06 - 2 cups rotisserie chicken.
07 - 4 cups chicken stock.
08 - 2 teaspoons salt.
09 - 1 teaspoon pepper.
10 - 1 teaspoon onion powder.
11 - 1 teaspoon garlic powder.
12 - 1 tablespoon Italian seasoning.
13 - 3/4 cup barley.

# Instructions:

01 - Rinse and drain barley and set aside.
02 - Heat olive oil in large pot over medium heat. Add onion and garlic, season with salt and pepper, and saute until onion is translucent.
03 - Add onion powder, garlic powder, and Italian seasoning. Stir to combine.
04 - Add carrots, celery, barley, and chicken. Stir to combine.
05 - Add chicken stock and bring to boil. Reduce heat to low, check seasoning, cover and simmer for 30 minutes until barley is soft.
06 - Do final taste test and adjust salt and pepper if needed.

# Notes:

01 - Can use any pre-cooked chicken.
02 - Barley should be rinsed before use.
03 - Adjust seasoning to taste.
