Creamy Carrot Ginger Soup (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 1 tablespoon butter
03 - 1 medium onion, chopped
04 - 3-4 cloves garlic, minced
05 - 2 teaspoons grated fresh ginger

→ Soup

06 - 1/2 teaspoon Italian seasoning
07 - 2 pounds carrots, peeled and chopped
08 - 4 cups chicken or vegetable broth
09 - 1 can (13.5 oz) coconut milk
10 - Salt and pepper to taste

# Instructions:

01 - Heat oil and butter in pot. Sauté onions until soft and lightly brown, 5-7 minutes.
02 - Stir in garlic, ginger, and Italian seasoning. Cook 1 minute.
03 - Add carrots and broth. Bring to boil, then simmer covered until carrots are soft, 20-25 minutes.
04 - Cool slightly, blend until smooth. Return to pot, stir in coconut milk. Season with salt and pepper.

01 - Adjust ginger to taste preference
02 - Can use immersion blender instead
03 - Let cool before blending
