Cajun Deviled Eggs (Print Version)

# Ingredients:

01 - 12 large eggs.
02 - 1/2 cup mayonnaise.
03 - 2 tablespoons green bell pepper, finely minced.
04 - 2 tablespoons celery, finely minced.
05 - 1 tablespoon yellow mustard.
06 - 1-2 teaspoons cajun seasoning.
07 - 1/2 teaspoon onion powder.
08 - Green onions for garnish.
09 - Extra cajun seasoning for garnish.

# Instructions:

01 - Cover eggs with cold water in pot. Bring to boil, cover, remove from heat. Let sit 12 minutes.
02 - Place eggs in ice water bath until completely cool. Peel when easy to handle.
03 - Cut eggs lengthwise. Remove yolks to mixing bowl and arrange whites on serving plate.
04 - Mix yolks with mayo, peppers, celery, mustard, cajun seasoning, and onion powder until smooth.
05 - Pipe or spoon mixture into egg whites. Add green onions and extra seasoning if desired.

# Notes:

01 - Can be made 24 hours ahead.
02 - Adjust cajun seasoning to taste.
03 - Chop vegetables very finely for smooth filling.
