Cabbage Roll Soup (Print Version)

# Ingredients:

01 - 2 teaspoons vegetable oil.
02 - 1 pound lean ground beef.
03 - Salt and pepper to taste.
04 - 1 medium yellow onion, finely diced.
05 - 2 cloves garlic, minced.
06 - 4 cups green cabbage, chopped.
07 - 2 medium carrots, quartered and sliced.
08 - 4 cups low-sodium beef broth.
09 - 3 cans (8 oz each) tomato sauce.
10 - 1/2 cup white rice, uncooked.
11 - 1 bay leaf.
12 - 3 tablespoons light brown sugar.
13 - 2 tablespoons fresh parsley, chopped.

# Instructions:

01 - Heat oil in dutch oven over medium-high heat.
02 - Add ground beef, season with salt and pepper.
03 - Cook until beef is browned.
04 - Add onion and garlic, cook 2-3 minutes until onions soften.
05 - Stir in cabbage, carrots, tomato sauce, beef broth, rice, bay leaf, and brown sugar.
06 - Bring to simmer.
07 - Cook about 25 minutes until rice is tender.
08 - Remove bay leaf.
09 - Sprinkle with parsley before serving.

# Notes:

01 - Rice will continue to absorb liquid as soup sits. Add more broth when reheating if needed.
