Fudgy Brownie Baked Oats (Print Version)

# Ingredients:

01 - 2 cups old-fashioned oats
02 - ½ cup dutch processed cocoa powder
03 - 1 teaspoon baking powder
04 - ¼ teaspoon salt
05 - 1¼ cup milk
06 - ⅓ cup maple syrup
07 - 2 large eggs
08 - 3 tablespoon melted coconut oil (or butter)
09 - 2 teaspoon pure vanilla extract
10 - ½ cup chocolate chips, plus extra for topping
11 - Melted chocolate and flaky sea salt for topping (optional)

# Instructions:

01 - Get your oven going at 350°F. Grab your 8x8 baking pan and either spray it with non-stick spray or line it with parchment paper.
02 - In a large bowl, whisk together the oats, cocoa powder, baking powder, and salt until well combined.
03 - Pour in the milk, maple syrup, eggs, melted coconut oil, and vanilla. Stir everything until it's all combined and looks smooth.
04 - Gently fold in those chocolate chips using a rubber spatula. Pour the whole mixture into your prepared baking pan, then sprinkle some extra chocolate chips on top.
05 - Pop it in the oven for about 30-40 minutes. You'll know it's done when the center feels set when you touch it. Let it cool in the pan for a few minutes before serving.
06 - If you're feeling fancy, melt some extra chocolate chips or chopped chocolate and drizzle it over the top. Finish with a sprinkle of flaky sea salt for that perfect sweet-salty combo.

# Notes:

01 - These brownie baked oats make an excellent meal prep breakfast that can be reheated throughout the week.
02 - The dutch processed cocoa powder gives these a richer chocolate flavor than regular cocoa powder.
03 - For a more decadent breakfast, serve warm with a scoop of yogurt or ice cream on top.
04 - These can easily be made dairy-free by using plant-based milk and dairy-free chocolate chips.
