Breakfast Burritos with Sausage (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil
02 - 2 cups chopped vegetables such as red onion, bell pepper, mushrooms or broccoli
03 - 1 pound breakfast sausage or Italian sausage, removed from casings
04 - 8 eggs
05 - 2 pinches salt, to taste
06 - 2 teaspoons unsalted butter
07 - 8 burrito size tortillas
08 - 2 cups shredded cheddar cheese or Monterey Jack, pepper jack or a combination

# Instructions:

01 - Preheat oven to 375°F if baking burritos immediately. Skip this step if freezing for later.
02 - Heat olive oil in a medium/large nonstick skillet over medium heat. Add vegetables and cook, stirring often, until softened, about 4 minutes. Transfer to a clean medium bowl.
03 - Add sausage to the skillet and cook, crumbling it with a spatula, until browned and fully cooked. Transfer to the bowl with vegetables, leaving grease behind.
04 - Crack eggs into a medium bowl. Add salt and whisk vigorously until fully combined and uniform.
05 - Wipe skillet clean and melt butter over medium heat. Reduce heat to medium-low and pour in eggs. Let cook undisturbed for 30 seconds, then use a spatula to gently scramble until eggs are set. Add to the bowl with sausage and vegetables, stirring to combine.
06 - Place 1/8 of the egg, sausage, and vegetable mixture onto each tortilla in a line slightly off-center. Sprinkle 1/4 cup shredded cheese on top. Wrap tightly burrito-style.
07 - Optionally bake burritos at 375°F for 5-10 minutes to crisp tortillas before serving. To freeze, flash freeze burritos on a baking sheet for 2 hours, then transfer to a zip-top bag and store for up to 1 month.
08 - Thaw burritos overnight in the refrigerator. Microwave on high for 30-45 seconds, then heat in a 350°F oven for 10 minutes until fully hot. Alternatively, microwave until heated through.

01 - To achieve a crispier tortilla, use the oven to reheat burritos. Microwaving results in a chewier texture.
