Braided Brioche Bread (Print Version)

# Ingredients:

01 - 4 cups bread flour.
02 - 2 cups all-purpose flour.
03 - 2¼ teaspoons active dry yeast (1 packet).
04 - ⅓ cup granulated sugar.
05 - 1 cup warm milk (100-110°F).
06 - 4 large eggs.
07 - 1 cup unsalted butter, softened.
08 - 2 teaspoons kosher salt.
09 - For egg wash: 1 egg mixed with 1 tablespoon water.
10 - Extra butter for brushing (optional).

# Instructions:

01 - Mix flours, salt, and softened butter in a stand mixer bowl with dough hook on low speed for 1 minute.
02 - Combine warm milk, yeast, and sugar in a measuring cup. Let sit 15 minutes until foamy.
03 - Add eggs to yeast mixture and stir well.
04 - Pour wet ingredients into flour mixture, mix on low until combined.
05 - Mix on medium speed 2-3 minutes until dough is slightly sticky but firm.
06 - Place dough in greased bowl, smooth side up.
07 - Cover and let rise 45-60 minutes until doubled.
08 - Divide dough in half on oiled surface.
09 - Split each half into three pieces.
10 - Roll each piece into 12-15 inch ropes.
11 - Braid three ropes together, tuck ends under.
12 - Place on baking sheet, repeat with second loaf.
13 - Cover and let rise until almost doubled.
14 - Brush with egg wash, sprinkle with salt.
15 - Bake at 375°F for 25 minutes.
16 - Brush with melted butter if desired.
17 - Cool completely on wire rack before slicing.
