Best Chocolate Cupcakes (Print Version)

# Ingredients:

01 - 3 cups (372g) all purpose flour.
02 - 2 cups (400g) granulated sugar.
03 - 1/2 cup (40g) unsweetened cocoa powder.
04 - 2 teaspoons baking soda.
05 - 1 teaspoon table salt.
06 - 2 cups (474ml) hot water.
07 - 3/4 cup (177ml) vegetable oil.
08 - 2 tablespoons (30ml) white vinegar.
09 - 1 tablespoon instant coffee granules (optional).
10 - 1 teaspoon vanilla extract.

# Instructions:

01 - Heat oven to 350°F. Line cupcake pans with about 30 liners.
02 - Whisk flour, sugar, cocoa, baking soda, and salt in large bowl.
03 - Combine hot water, oil, vinegar, coffee (if using), and vanilla. Mix into dry ingredients until just combined.
04 - Fill liners 2/3 full. Bake 12-15 minutes until toothpick comes out clean.
05 - Cool completely before adding desired frosting.

# Notes:

01 - Don't use Dutch process cocoa.
02 - Coffee granules enhance chocolate flavor.
03 - Can be frozen frosted or unfrosted.
