Baked Feta Potatoes (Print Version)

# Ingredients:

01 - 1-2 large baking potatoes
02 - 200g block of feta
03 - 2 tbsp olive oil
04 - 1 tsp dried thyme
05 - 1 tsp dried oregano
06 - 1 tsp salt
07 - 1 tsp black pepper
08 - 1 head of garlic, top cut off
09 - 1 lemon, quartered
10 - 1 tbsp honey
11 - 1/4 cup (20g) fresh basil

# Instructions:

01 - Preheat your oven to 200C (390F).
02 - Wash and cube your potatoes, then add them to your baking dish.
03 - Add the thyme, oregano, salt, and pepper to the potatoes along with 1 tbsp olive oil, and stir them to coat evenly.
04 - Add the feta to the middle of the tray (dip one side in the seasonings, then flip it over). Add the garlic and half the lemon to the tray, then drizzle over the remaining olive oil.
05 - Bake the potatoes and feta for 45-55 minutes, until the potatoes are crispy and golden. Remove the garlic after 35 minutes if it starts to brown.
06 - Squeeze the garlic cloves out of their skins and mash them with a sharp knife.
07 - Stir the mashed garlic and the juice of the remaining half of the lemon back into the potatoes along with your fresh basil. Gently mix the roast potatoes with the baked feta.
08 - Drizzle over the honey and shredded basil. Serve and enjoy!

# Notes:

01 - If your potatoes haven't cooked by the allotted time, you may need to remove the feta and continue roasting the potatoes. Otherwise, the feta can become rubbery.
02 - Cubing your potatoes on the smaller side can help ensure even cooking.
