Avocado Hot Sauce Condiment (Print Version)

# Ingredients:

01 - 2 ripe avocados, halved, pitted, and peeled
02 - 1 lime, zested and juiced
03 - 1 clove garlic, peeled
04 - 2 teaspoons red wine vinegar
05 - 1 serrano pepper (add more for extra heat or use jalapeño for less heat)
06 - 1/4 teaspoon kosher salt, plus more to taste
07 - ½ cup water, plus more as needed

# Instructions:

01 - Place all ingredients in a blender or food processor and blend until smooth. Season with salt, to taste.
02 - Transfer the hot sauce to a jar or squeeze bottle and serve immediately, or refrigerate until ready to use.

# Notes:

01 - The finished sauce should have a texture between a pourable dressing and a creamy dip. If too thick, blend in 1 teaspoon of cold water or lime juice at a time until loosened. The sauce may thicken slightly after chilling in the fridge.
02 - To brighten the green color, press a piece of plastic wrap against the surface of the sauce or store in an airtight squeeze bottle with minimal air.
