Apple Cinnamon Caramel Cookies (Print Version)

# Ingredients:

01 - 2 fresh tart apples, cut into small cubes.
02 - 2 spoons brown sugar for the apples.
03 - 1 teaspoon cinnamon.
04 - 1 stick soft butter.
05 - ½ cup dark brown sugar.
06 - ¼ cup white sugar.
07 - 1 teaspoon vanilla.
08 - 1 large egg from the fridge.
09 - 1⅓ cups regular flour.
10 - ½ teaspoon baking soda.
11 - ½ teaspoon salt.
12 - Salted caramel for topping.

# Instructions:

01 - Cook the apple cubes with sugar and cinnamon until they're just soft. Let them cool down completely.
02 - Beat butter with both sugars and vanilla until fluffy. Add the egg and mix well.
03 - Mix flour, baking soda and salt in another bowl. Slowly add to the butter mixture.
04 - Fold in the cooled apples gently. Put the dough in the fridge if it feels too soft.
05 - Heat oven to 350°F. Drop spoonfuls of dough on lined baking sheets. Bake 10-12 minutes until golden edges appear.
06 - Let cookies cool, then drizzle with caramel sauce.

01 - Store cookies in a sealed container for 3 days or freeze up to 3 months.
02 - Dough can be made a day ahead.
03 - Try adding nutmeg or using pears instead of apples.
