Heat your oven to 350°F. Grab your 8x8 baking pan and either spray it with cooking spray or line it with some parchment paper so nothing sticks.

In a bowl, whisk together the oats, baking powder, salt, cinnamon, and nutmeg until they're all evenly mixed.

Pour in the milk, maple syrup, applesauce (or eggs if you're using those instead), melted coconut oil, and vanilla. Stir everything until it's well combined. Gently fold in about 3/4 cup of those chopped apples, saving the rest for topping.

Pour the oat mixture into your prepared baking pan. Sprinkle the remaining 1/4 cup of chopped apples over the top. Mix the sugar and cinnamon together in a small bowl, then sprinkle that over everything.

Slide the pan into your preheated oven and bake for about 35-45 minutes. You'll know it's done when the center feels set and the top has turned a light golden brown. Let it cool in the pan for a few minutes before serving.
