# Ingredients:

01 - 2¼ cups old-fashioned oats
02 - 1 teaspoon baking powder
03 - ¼ teaspoon salt
04 - 1 teaspoon cinnamon
05 - ¼ teaspoon nutmeg
06 - 1¼ cup milk at room temperature
07 - ¼ cup maple syrup
08 - ½ cup unsweetened applesauce (or 2 eggs)
09 - 3 tablespoon melted coconut oil (or butter)

11 - 1 cup finely chopped apples, divided

# Instructions:

01 - Heat your oven to 350°F. Grab your 8x8 baking pan and either spray it with cooking spray or line it with some parchment paper so nothing sticks.
02 - In a bowl, whisk together the oats, baking powder, salt, cinnamon, and nutmeg until they're all evenly mixed.
03 - Pour in the milk, maple syrup, applesauce (or eggs if you're using those instead), melted coconut oil, and vanilla. Stir everything until it's well combined. Gently fold in about 3/4 cup of those chopped apples, saving the rest for topping.
04 - Pour the oat mixture into your prepared baking pan. Sprinkle the remaining 1/4 cup of chopped apples over the top. Mix the sugar and cinnamon together in a small bowl, then sprinkle that over everything.
05 - Slide the pan into your preheated oven and bake for about 35-45 minutes. You'll know it's done when the center feels set and the top has turned a light golden brown. Let it cool in the pan for a few minutes before serving.
