Place the Oreos in a sealable plastic bag, and crush them using a rolling pin or sturdy wooden spoon. Spoon 1 1/2 to 2 tablespoons of the crushed Oreos into the bottom of six small dessert dishes (each with a capacity of 3/4 to 1 cup). Set aside.

Using a hand or standing mixer, beat the cream cheese and powdered sugar together until the mixture is creamy and smooth. Add in the vanilla extract and mix until combined.

Gently fold the whipped topping into the cream cheese mixture using a spatula. Add the remaining crushed Oreos and fold until evenly incorporated.

Evenly distribute the cheesecake filling among the prepared dishes, gently pressing onto the crushed Oreo base.

Chill the cheesecake cups for about 1 hour, or until ready to serve. Before serving, top with additional whipped cream and crushed Oreos, if desired.
