Ground Beef and Broccoli (Print Version)

# Ingredients:

01 - 15 mL peanut oil (or substitute vegetable or olive oil)
02 - 450 g ground beef
03 - 1 yellow onion, diced
04 - 1 red bell pepper, sliced
05 - 3 cups (approximately 300 g) broccoli florets, washed and patted dry
06 - Salt and white pepper, to taste

→ Sauce

07 - 2 tablespoons cornstarch
08 - 2 tablespoons cold water
09 - 240 mL beef broth
10 - 60 mL soy sauce
11 - 3 tablespoons packed brown sugar
12 - 1–2 tablespoons honey
13 - 2 garlic cloves, minced
14 - 0.5 teaspoon ground ginger
15 - 1 teaspoon toasted sesame oil

→ For Serving

16 - 3 cups cooked rice, any variety

# Instructions:

01 - Combine cornstarch with cold water in a lidded container. Shake well and set aside in a cool location.
02 - In a medium bowl, whisk together the beef broth, soy sauce, brown sugar, honey, minced garlic, ground ginger, and toasted sesame oil. Adjust honey to taste after reducing the sauce if desired.
03 - Heat peanut oil in a large skillet over medium heat. Add broccoli florets, tossing to coat. Cook for 4–5 minutes until just tender. Remove broccoli and set aside.
04 - Season ground beef with salt and white pepper as desired. Add beef and diced onion to the skillet over medium-high heat, breaking up meat and cooking until browned throughout. Drain excess fat, then add sliced bell pepper and cook for 1 minute further.
05 - Pour in the prepared sauce mixture. Bring to a boil, then reduce heat and simmer 2–3 minutes to intensify flavors.
06 - Shake the cornstarch slurry once more and gradually stir it into the simmering sauce. Allow mixture to gently bubble until sauce reaches desired thickness.
07 - Reduce heat to low. Return sautéed broccoli to the skillet and stir to combine, heating through. Serve over freshly cooked rice and garnish if desired.

# Notes:

01 - For lower sodium, use reduced-salt soy sauce and broth. Enhance flavor by cooking rice in chicken bouillon. Additional vegetable options include carrots or water chestnuts.
02 - Substitute ground turkey or chicken for a lighter variation. Both fresh and thawed frozen broccoli are suitable.
03 - Top servings with green onions, peanuts, sesame seeds, crispy chow mein noodles, or almonds for extra texture.
