Combine the flour, sugar, baking powder, and salt in a mixing bowl.

Add the egg, milk, water, and vanilla extract to the dry ingredients. Stir until the batter is smooth and well combined.

Let the batter sit for about 5 minutes while the oil continues to heat.

Spoon the batter into the hot oil using a dinner spoon. Fry 5-7 spoonfuls at a time. Cook for 15-30 seconds on one side, then flip and cook the other side until browned.

Remove the browned funnel cake bites using a slotted spoon. Place them on a paper towel to drain excess oil. Dust with powdered sugar if desired and serve immediately.
