Easy Spinach Cottage Cheese Flagels (Print Version)

# Ingredients:

01 - 1 cup cottage cheese
02 - 1 cup + 2 tablespoons all-purpose flour
03 - 3 teaspoons baking powder
04 - 1/2 teaspoon salt
05 - 1 tablespoon olive oil
06 - 2 ounces baby spinach, micro chopped
07 - 1/2 cup shredded mozzarella cheese
08 - 1 egg, lightly beaten (for egg wash)

# Instructions:

01 - Preheat oven to 375℉. Line a large rimmed baking sheet with parchment paper.
02 - Add cottage cheese to a mini food processor and pulse until smooth.
03 - Combine cottage cheese, flour, baking powder, salt, olive oil, spinach, and mozzarella cheese in a large mixing bowl. Mix until combined, then use your hands to form the dough into a thick log (6 inches long).
04 - Divide the dough into 6 equal pieces. Shape each piece into a flat circle and create a hole in the middle with your finger.
05 - Place the shaped dough pieces on the prepared baking sheet. Brush with egg wash and bake for 22-25 minutes or until golden brown on top.
06 - Transfer baked flagels to a wire rack to cool completely before serving.
