Preheat oven to 375℉. Line a large rimmed baking sheet with parchment paper.

Add cottage cheese to a mini food processor and pulse until smooth.

Combine cottage cheese, flour, baking powder, salt, olive oil, spinach, and mozzarella cheese in a large mixing bowl. Mix until combined, then use your hands to form the dough into a thick log (6 inches long).

Divide the dough into 6 equal pieces. Shape each piece into a flat circle and create a hole in the middle with your finger.

Place the shaped dough pieces on the prepared baking sheet. Brush with egg wash and bake for 22-25 minutes or until golden brown on top.
