Easy Creamy Cucumber Salad (Print Version)

# Ingredients:

01 - 3 pounds peeled cucumbers
02 - 1 small onion, red or yellow
03 - 18 ounces light sour cream
04 - 3/4 cup white distilled vinegar
05 - 1 tablespoon sugar
06 - 2 teaspoons fresh dill, chopped

# Instructions:

01 - Slice peeled cucumbers using a knife or mandoline. Finely chop the onion.
02 - Add sliced cucumbers and finely chopped onion to a large bowl.
03 - In another bowl, mix together light sour cream, white distilled vinegar, sugar, and chopped dill. Optional: season with salt and pepper to taste.
04 - Pour the sour cream mixture over the sliced cucumbers and chopped onion. Mix to combine.
05 - Cover the bowl (or transfer to an airtight container) and refrigerate for at least 1 hour before serving.
