Rich Coffee Caramel Cake (Print Version)

# Ingredients:

→ Cake

01 - 1 cup buttermilk
02 - 4 teaspoons instant coffee granules
03 - 1/2 cup butter, softened
04 - 1 cup packed brown sugar
05 - 2 large eggs
06 - 1 teaspoon vanilla extract
07 - 2 cups all-purpose flour
08 - 2 tablespoons cornstarch
09 - 1 1/2 teaspoons baking powder
10 - 1/2 teaspoon baking soda
11 - 1/2 teaspoon salt
12 - 1/4 teaspoon ground nutmeg
13 - 3/4 cup caramel ice cream topping

→ Frosting

14 - 1 tablespoon baking cocoa
15 - 2 teaspoons instant coffee granules
16 - 1/4 cup boiling water
17 - 1/2 cup butter, softened
18 - 1/4 cup confectioners' sugar
19 - 3/4 cup semisweet chocolate chips, melted

# Instructions:

01 - Warm buttermilk and dissolve coffee granules in it.
02 - Cream butter and sugar. Add eggs and vanilla. Mix in dry ingredients alternating with coffee buttermilk.
03 - Pour into 13x9 pan. Bake at 350°F for 20-25 minutes. Poke holes and pour in caramel.
04 - Mix cocoa and coffee with hot water. Beat butter and sugar, add chocolate and coffee mixture.
05 - Spread frosting over cooled cake.

# Notes:

01 - Let cake cool completely before frosting
02 - Space holes about 2 inches apart
03 - Allow caramel to soak in fully
