Creamy Chicken Wild Rice Soup (Print Version)

# Ingredients:

→ Base

01 - 3/4 cup uncooked wild rice blend
02 - 1 tablespoon olive oil
03 - 2 tablespoons butter

→ Vegetables

04 - 1 stick celery, chopped finely
05 - 2 medium carrots, peeled & chopped finely
06 - 1 medium onion, chopped
07 - 3 cloves garlic, minced

→ Soup Base

08 - 1/4 cup flour
09 - 4 cups chicken broth
10 - 1/2 teaspoon Italian seasoning
11 - 1 cup heavy cream
12 - 1 pound chicken breasts, cut into bite-size pieces
13 - Salt & pepper to taste
14 - Fresh parsley, chopped (optional)

# Instructions:

01 - Cook wild rice according to package directions.
02 - Cook celery, carrots, and onions in oil and butter for 7-8 minutes until softened.
03 - Add garlic and flour, cook 1 minute. Slowly add broth, stirring to dissolve flour.
04 - Add seasonings, cream, chicken, and cooked rice. Simmer 8-10 minutes until chicken is cooked.
